Ġbejna Grilled Vegetable Salad
- 1 medium sized courgette
- 1 coloured pepper
- 1 ġbejna (any seasoning of your choice, we used Ġbejna Mħawra)
- 6 cherry tomatoes
- 6/8 lettuce leaves
- 6 walnuts
- Olive oil
- Chili flakes
- Balsamic vinegar
- Salt & pepper
- Cut your courgette, and pepper into slices and grill them with some olive oil.
- Rinse the lettuce leaves and prepare them on a dish.
- Halve the cherry tomatoes and spread over the lettuce.
- Crumble or cube the ġbejna and put aside.
- Prepare your balsamic dressing by combining 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, chili flakes, salt, and pepper.
Once your vegetables are grilled to your liking, serve them on top of the lettuce leaves along with the crumbled/ cubed ġbejna. Finish off by drizzling your dressing over the salad.
