Ġbejna Grilled Vegetable Salad

Serves 2


  • 1 medium sized courgette
  • 1 coloured pepper
  • 1 ġbejna (any seasoning of your choice, we used Ġbejna Mħawra)
  • 6 cherry tomatoes
  • 6/8 lettuce leaves
  • 6 walnuts
  • Olive oil
  • Chili flakes
  • Balsamic vinegar
  • Salt & pepper



  • Cut your courgette, and pepper into slices and grill them with some olive oil.
  • Rinse the lettuce leaves and prepare them on a dish.
  • Halve the cherry tomatoes and spread over the lettuce.
  • Crumble or cube the ġbejna and put aside.
  • Prepare your balsamic dressing by combining 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, chili flakes, salt, and pepper.


Once your vegetables are grilled to your liking, serve them on top of the lettuce leaves along with the crumbled/ cubed ġbejna. Finish off by drizzling your dressing over the salad.
