Mozzarella Pesto Pasta

Ingredients

  • 200g Benna Pizza Mozzarella
  • 250g pasta
  • 140g pesto
  • Olive oil
  • 220g chopped Zucchini
  • 220g chopped Cherry Tomatoes
  • 3 garlic cloves
  • Parmesan cheese
  • Fresh parsley

Instructions

  1. 1. In a baking tray add the zucchini, cherry tomatoes, garlic and olive oil. Mix well.
  2. Bake the veggies for 15 minutes or until tender.
  3. Boil the past 3 minutes less the time it says on the packet.
  4. In the same baking tray mix together the veggies pasta and pesto.
  5. Cut the mozzarella into cubes and place it in between the pasta, sprinkle some Parmesan and parsley on top. Bake for 7 to 10 minutes or until the mozzarella is melted.
