Fried Ġbejna with Side Salad

Serves 2


  • 2 Ġbejna bajda
  • 1 cup plain flour
  • 2 eggs
  • 1.5 cups breadcrumbs
  • Salt & pepper
  • Mixed herbs



  • Slice your ġbejniet in half, which will give you 4 portions
  • Mix the breadcrumbs with the herbs, salt and pepper and place in a bowl
  • Place the beaten eggs in a bowl
  • Dip the ġbejna first into the flour, then the egg mixture, then the breadcrumbs
  • Remove any excess crumbs and shallow fry in a well-oiled pan
  • Let them fry for approx. 7 minutes on each side. When you begin to see the edges brown, flip them
  • Once done lay them on a paper napkin to absorb excess oil and rest before serving
  • Serve with a small side salad and a dressing of your choice (chutney, mayo, cranberry sauce)
