Almond Tart

Serves

Ingredients (Dough)

  • 110g Benna Unsalted Butter
  • 120g of plain flour
  • 70g self rising flour
  • 70g of brown sugar
  • 1 egg yolk
  • Lemon zest
  • Lemon juice

Ingredients (Filling)

  • 230g ground almonds
  • 2 egg whites
  • 2 tbsp honey
  • Lemon and orange zest
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 tbsps water

Method

  1. In a food processor or mixer add the flour, sugar , butter , egg yolk, vanilla and lemon zest. Mix until it forms a dough.
  2. Wrap into plastic and refrigerate for 1 hour .
  3. In a bowl mix together The ground almonds, egg whites, honey, vanilla and almond extract , orange and lemon zest. Mix until you have a paste consistency.
  4. Roll out your dough and place it on a tart tray. Add the almond filling and sliced almonds on top. Bake for 25 minutes on 180C.
