Mozzarella Ham & Mushroom Quesadilla

Ingredients

  • 60g of ham (chopped)
  • 60g cooked mushrooms
  • 75g Benna Pizza Mozzarella (shredded)
  • 2 eggs
  • 2 tortilla wraps
  • 1tbsp butter
  • Salt and pepper
  • Fresh parsley

Method

  1. In a bowl, whisk the eggs. Add the chopped ham, mushrooms, and parsley to the eggs and mix well.
  2. Melt the butter in a pan over medium heat, then pour in the egg mixture.
  3. Sprinkle shredded Benna Pizza Mozzarella evenly over the eggs as they begin to cook.
  4. Place one tortilla on top of the egg mixture and gently press down. Cook until the eggs are mostly set, then carefully flip.
  5. Sprinkle more mozzarella on top, then place the second tortilla (cut into a pumpkin face shape) over the cheeses
  6. Cook until the bottom is golden and the cheese has melted, flipping once more if needed.
