Hasselback Chicken with Fresh Mozzarella

Ingredients
- 200–250g chicken breast
- A single portion of Benna Fresh Mozzarella
- 250g cherry tomatoes (halved)
- A small handful of fresh basil leaves
- 2 small spring onions (chopped)
- Olive oil
- Sand pepper

Pat the chicken breast dry with a paper towel. Make 4 slits along the top of the chicken. Insert slices of Benna Fresh Mozzarella into each slit. Drizzle with olive oil and season with salt and pepper.

In a baking tray, combine cherry tomatoes, basil, and spring onions. Drizzle with olive oil and season with salt and pepper. Toss gently to coat.

Add the chicken among the vegetables in the tray. Bake in a preheated oven at 200°C for 25–30 minutes, or until the chicken is fully cooked and the cheese is melted.

Serve hot with your choice of sides rice, roasted potatoes, or a fresh salad.
