Mince Pies

Ingredients
- 250g plain flour
- 200g Benna Unsalted Butter
- 2 tablespoons caster sugar
- 1 tablespoon orange zest or lemon zest
- 2 tablespoons ice-cold water
- Mince meat filling
- Egg wash
Method

In a food processor, add the flour, caster sugar, and orange or lemon zest. Blend briefly until well combined.

Add the butter and one tablespoon of ice cold water. Pulse gently.

While the food processor is running, slowly add the remaining tablespoon of ice cold water until the dough just comes together.

Turn the dough out onto a clean surface, bring it together gently, then wrap it tightly in plastic wrap. Refrigerate for 1 hour.

After chilling, remove the dough from the fridge and unwrap it. Roll it out on a lightly floured surface.

Using a round cookie cutter, cut out circles. Using a star shaped cutter, cut out stars for the tops.

Place the round pastry pieces into a muffin tin, gently pressing them in. Fill each with the mince filling.

Place a star shaped piece of pastry on top of each one and brush with egg wash.

Bake in a preheated oven until the pastry is fully cooked and golden, about 25 minutes on 200C
