Vanilla Cinnamon Muffins

Serves

Wet Ingredients

  • 2 large eggs
  • 60g Benna Unsalted Butter, melted
  • 120g Benna Pro Milk
  • 113g honey
  • 1 1/2 tsps of vanilla extract

Dry Ingredients

  • 125 g self-rising flour
  • 1 tsp baking powder
  • 1 1/2 tsps of cinnamon
  • Cacao powder (optional for topping)

Cookies and Cream Glaze

  • 120g powdered sugar
  • 2 tbsp Benna Cookies and Cream Milkshake

Method

  1. In a mixing bowl, whisk together the eggs, melted butter, milk, honey, and vanilla extract until smooth.
  2. Add the self rising flour, baking powder, and cinnamon. Mix
  3. Spoon the batter into cupcake liners, filling each about ¾ full.
  4. Bake at 180°C (350°F) for 15–20 minutes, or until a toothpick inserted in the center comes out clean.
  5. Stir together the powdered sugar and cookies-and-cream milk until smooth and pourable.
  6. Drizzle the glaze over the cooled muffins. Dust with a little cacao powder .
