Double Chocolate Loaf Cake

Serves

Dry Ingredients

  • 130g wholemeal flour
  • 35g cacao powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 70g coconut sugar
  • Pinch of salt
  • 100g dark chocolate (70%), chopped
  • 30/40g chocolate chips (for topping)

Wet Ingredients

  • 125g Benna Unsalted Butter
  • 120ml of pro milk
  • 2 large eggs
  • 1½ teaspoons vanilla extract

Method

  1. In a small saucepan over low heat, melt the butter and dark chocolate together, stirring until smooth. Remove from the heat and let it cool completely.
  2. In a large bowl, whisk together the eggs, vanilla extract, and coconut sugar until light and slightly frothy.
  3. Pour the cooled chocolate-butter mixture into the egg mixture and whisk until fully combined.
  4. In a separate bowl, add the wholemeal flour, cacao powder, baking powder, baking soda, and salt.
  5. Add the wet mixture to the dry mixture and mix.
  6. Pour the batter into a greased or lined loaf tin. Sprinkle chocolate chips on top.
  7. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until a toothpick inserted in the center comes out clean (a few moist crumbs are fine).
