Double Chocolate Loaf Cake
Serves
Dry Ingredients
- 130g wholemeal flour
- 35g cacao powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 70g coconut sugar
- Pinch of salt
- 100g dark chocolate (70%), chopped
- 30/40g chocolate chips (for topping)
Wet Ingredients
- 125g Benna Unsalted Butter
- 120ml of pro milk
- 2 large eggs
- 1½ teaspoons vanilla extract
Method

In a small saucepan over low heat, melt the butter and dark chocolate together, stirring until smooth. Remove from the heat and let it cool completely.

In a large bowl, whisk together the eggs, vanilla extract, and coconut sugar until light and slightly frothy.

Pour the cooled chocolate-butter mixture into the egg mixture and whisk until fully combined.

In a separate bowl, add the wholemeal flour, cacao powder, baking powder, baking soda, and salt.

Add the wet mixture to the dry mixture and mix.

Pour the batter into a greased or lined loaf tin. Sprinkle chocolate chips on top.

Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until a toothpick inserted in the center comes out clean (a few moist crumbs are fine).
